Almond Flour
  • 2 cups almond flour
Cocoa Powder
  • 1/4 cup unsweetened cocoa powder
Honey or Maple Syrup
  • 1/4 cup honey or maple syrup
Eggs
  • 3 large large eggs
Almond Butter
  • 1/4 cup almond butter
Vanilla Extract
  • 1 teaspoon vanilla extract
Baking Soda
  • 1 teaspoon baking soda
Salt
  • 1/2 teaspoon salt
Dark Chocolate Chips
  • 1/2 cup dark chocolate chips (dairy-free if desired)

Method
 

  1. Preheat oven to 350°F (175°C) and line a muffin tin.
  2. Mash bananas, then mix in eggs, honey, almond butter, and vanilla.
  3. Combine dry ingredients and add to wet mixture, stirring until just combined.
  4. Fold in chocolate chips, then divide batter into muffin cups.
  5. Bake for 18-20 minutes, cool before serving.
