Ingredients

  • 2 pieces ripe bananas, mashed
  • 2 cups almond flour
  • 1/4 cup honey or maple syrup
  • 2 eggs eggs
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon (optional)
  • 1/2 cup chopped nuts or chocolate chips (optional)

Method
 

  1. Preheat oven to 350°F (175°C) and prepare muffin tin.
  2. Mix mashed bananas, honey, eggs, melted coconut oil, and vanilla in a bowl.
  3. Combine dry ingredients: almond flour, baking soda, baking powder, salt, and cinnamon.
  4. Gradually add dry to wet, fold in nuts or chocolate chips if desired, then fill muffin cups.
  5. Bake for 18-20 minutes, cool before serving.

Notes

For extra flavor, add a pinch of cinnamon or top with nuts or chocolate chips.
