  • 1 tablespoon Olive Oil
  • 2 cloves Garlic (Minced)
  • 1/2 cup Chicken Broth
  • 4 oz Cream Cheese (Softened)
  • 2 tablespoons Fresh Chives (Chopped)
  • 1/2 teaspoon Paprika
  • Salt and Pepper to taste
  • 1/2 cup Shredded Sharp Cheddar Cheese (Optional)
  • 2 tablespoons Fresh Parsley (Optional)

Method
 

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Season chicken breasts with salt, pepper, and paprika. Sear in olive oil for 2-3 minutes on each side until golden brown.
  3. In the same skillet, sauté minced garlic, add chicken broth, and simmer. Stir in softened cream cheese and fresh chives until smooth.
  4. Place seared chicken in the baking dish and pour the cream cheese mixture over the top. Add shredded cheddar cheese if desired.
  5. Bake for 25-30 minutes until chicken reaches 165°F (74°C). Use the broiler for 2-3 minutes for a crispy layer if cheese is added.
  6. Allow to rest for 5 minutes, garnish with fresh parsley, and serve with your choice of sides.

Notes

For a richer flavor, use full-fat cream cheese. Serve with rice, pasta, or roasted vegetables.
