- Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- Season chicken breasts with salt, pepper, and paprika. Sear in olive oil for 2-3 minutes on each side until golden brown.
- In the same skillet, sauté minced garlic, add chicken broth, and simmer. Stir in softened cream cheese and fresh chives until smooth.
- Place seared chicken in the baking dish and pour the cream cheese mixture over the top. Add shredded cheddar cheese if desired.
- Bake for 25-30 minutes until chicken reaches 165°F (74°C). Use the broiler for 2-3 minutes for a crispy layer if cheese is added.
- Allow to rest for 5 minutes, garnish with fresh parsley, and serve with your choice of sides.
Notes
For a richer flavor, use full-fat cream cheese. Serve with rice, pasta, or roasted vegetables.
