  • 1 tablespoon olive oil
  • 1 tablespoon Cajun seasoning
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon black pepper
  • 1 red bell pepper sliced
  • 1 green bell pepper sliced
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 pound pasta (penne, fettuccine, or your favorite)
  • 1 cup heavy cream
  • 0.5 cup chicken broth
  • 0.25 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley (optional)

Method
 

  1. Cook pasta according to package directions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Add chicken, Cajun seasoning, garlic powder, and black pepper. Cook until chicken is cooked through and lightly browned.
  3. Add bell peppers and onion to the skillet. Cook until softened, about 5 minutes.
  4. Add minced garlic and cook for 1 minute more.
  5. Pour in heavy cream and chicken broth. Bring to a simmer and cook for 5 minutes, or until sauce has thickened slightly.
  6. Stir in Parmesan cheese until melted and smooth.
  7. Add cooked pasta to the skillet and toss to coat with the sauce.
  8. Season with salt to taste.
  9. Garnish with fresh parsley, if desired. Serve immediately.

Adjust the amount of Cajun seasoning to control the spiciness of the dish.
