Method
- Season chicken with garlic powder, onion powder, Italian seasoning, red pepper flakes (if using), salt, and pepper.
- Sear chicken in olive oil for 2-3 minutes per side (optional).
- Place seared chicken in the crock pot.
- Combine cream of mushroom soup, diced tomatoes, and chicken broth; pour over chicken.
- Cook on low for 6-8 hours or on high for 3-4 hours, until chicken is cooked.
- Stir in cream cheese and Parmesan cheese during the last 30 minutes.
- Shred chicken in the crock pot.
- Serve over pasta, rice, or mashed potatoes. Garnish with basil.
Notes
For a richer flavor, use bone-in chicken thighs. Adjust cooking time accordingly.
