Ingredients
  

Chicken
  • 2 lbs boneless, skinless chicken breasts
Seasoning
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp Italian seasoning
  • 0.25 tsp red pepper flakes optional
  • Salt and pepper to taste
Sauce
  • 10.75 oz condensed cream of mushroom soup
  • 10 oz diced tomatoes and green chilies, undrained (Rotel)
  • 0.5 cup chicken broth
  • 4 oz cream cheese, softened
  • 0.25 cup grated Parmesan cheese
Garnish & Serving
  • Fresh basil, chopped for garnish
  • Cooked pasta, rice, or mashed potatoes for serving

Method
 

  1. Season chicken with garlic powder, onion powder, Italian seasoning, red pepper flakes (if using), salt, and pepper.
  2. Sear chicken in olive oil for 2-3 minutes per side (optional).
  3. Place seared chicken in the crock pot.
  4. Combine cream of mushroom soup, diced tomatoes, and chicken broth; pour over chicken.
  5. Cook on low for 6-8 hours or on high for 3-4 hours, until chicken is cooked.
  6. Stir in cream cheese and Parmesan cheese during the last 30 minutes.
  7. Shred chicken in the crock pot.
  8. Serve over pasta, rice, or mashed potatoes. Garnish with basil.

Notes

For a richer flavor, use bone-in chicken thighs. Adjust cooking time accordingly.
