Crockpot Chicken Tacos

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 packet taco seasoning
  • 1 cup salsa
  • 0.5 cup water or chicken broth
  • Taco shells or tortillas
  • Toppings: shredded lettuce, diced tomatoes, shredded cheese, sour cream, guacamole, etc.

Method
 

  1. Place chicken breasts in the crockpot.
  2. Sprinkle taco seasoning over the chicken.
  3. Pour salsa and water/broth over the chicken.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until chicken is easily shredded.
  5. Remove chicken from the crockpot and shred with two forks.
  6. Return the shredded chicken to the crockpot and stir to coat with the sauce.
  7. Serve in taco shells or tortillas with your favorite toppings.

Notes

For extra flavor, consider browning the chicken breasts before adding them to the crockpot.
