Ingredients
  

Bananas
  • 3 pieces ripe bananas, mashed
  • 1/3 cup coconut oil, melted
  • 1/2 cup maple syrup or agave syrup
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 cup walnuts or chocolate chips (optional) optional

Method
 

  1. Preheat oven to 350°F (175°C) and line a muffin tin.
  2. Mix mashed bananas, melted coconut oil, maple syrup, and vanilla.
  3. Whisk together flour, baking soda, salt, and cinnamon.
  4. Combine wet and dry ingredients; fold in nuts or chocolate chips if desired.
  5. Spoon batter into muffin tin; bake 18-22 minutes until golden and cooked through.
  6. Cool muffins before serving.

Notes

For extra flavor, add a dash of nutmeg or vanilla.
