Ingredients
  

Dry ingredients
  • 1 cup whole wheat flour
  • 1 cup rolled oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
Wet ingredients
  • 1 ripe banana banana, mashed
  • 1 cup unsweetened applesauce
  • 1 cup milk (or plant-based milk)
Add-ins
  • 1 cup blueberries (fresh or frozen)

Method
 

  1. Preheat oven to 350°F (175°C) and prepare muffin tin.
  2. Mix dry ingredients in a bowl.
  3. Combine mashed banana, applesauce, and milk.
  4. Mix wet and dry ingredients, then fold in blueberries.
  5. Spoon batter into muffin tin and bake 15-20 minutes.
  6. Cool muffins before serving.

Notes

Use ripe bananas for best flavor and sweetness.
