  • 1 pound boneless, skinless chicken breasts cut into bite-sized pieces
  • 1 pound pasta such as penne, rotini, or fettuccine
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • 0.5 cup chicken broth
  • 0.25 cup grated Parmesan cheese
  • 2 tablespoons butter
  • 0.25 cup heavy cream optional, for extra creaminess
  • 0.25 cup chopped fresh parsley
  • to taste Salt and pepper
  • Optional Red pepper flakes for a little heat

Method
 

  1. Cook pasta according to package directions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add chicken to skillet and cook until browned and cooked through (5-7 minutes). Season with salt and pepper.
  4. Add minced garlic to skillet and cook for about 30 seconds, until fragrant.
  5. Pour in chicken broth and bring to a simmer, scraping up any browned bits.
  6. Stir in Parmesan cheese, butter, and heavy cream (if using). Cook until sauce thickens slightly.
  7. Add cooked pasta to skillet and toss to coat with sauce.
  8. Stir in chopped parsley and red pepper flakes (if using).
  9. Serve immediately and enjoy!

Notes

For a lower-fat version, skip the heavy cream and use skim milk instead.
