  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
Wet ingredients
  • 1 cup milk
  • 1/2 cup maple syrup
  • 1/4 cup vegetable oil
  • 1 large egg

Method
 

  1. Preheat oven to 350°F (175°C) and line a muffin tin.
  2. Combine oats and milk; let sit for 10 minutes.
  3. Whisk maple syrup, oil, and egg; add oat mixture.
  4. Mix dry ingredients; fold into wet mixture.
  5. Spoon batter into muffin tin; bake 18-20 mins.
