Eggless Banana Muffins

Ingredients
  

Bananas
  • 2 pieces ripe bananas
  • 1/3 cup melted butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Pinch salt
  • 3/4 cup sugar
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 cup chopped walnuts or chocolate chips optional

Method
 

  1. Preheat oven to 350°F (175°C) and line a muffin tin.
  2. Mash bananas, stir in melted butter, vanilla, baking soda, and salt.
  3. Add sugar, then fold in flour and baking powder.
  4. Mix in walnuts or chocolate chips if using.
  5. Spoon batter into muffin cups and bake for 18-20 minutes.
  6. Cool muffins before serving.

Notes

For extra flavor, add a dash of cinnamon or nutmeg.
