Garlic Butter Chicken

  • 1.5 lbs boneless, skinless chicken breasts
  • 4 tbsp butter
  • 6 cloves garlic, minced
  • 1/4 cup chicken broth
  • 2 tbsp lemon juice
  • 1 tbsp chopped fresh parsley
  • 1/2 tsp dried thyme
  • to taste Salt and pepper

Method
 

  1. Season chicken breasts with salt and pepper.
  2. Melt 2 tablespoons of butter in a large skillet over medium-high heat.
  3. Add chicken to the skillet and cook for 5-7 minutes per side, or until cooked through. Remove chicken from skillet and set aside.
  4. Add remaining 2 tablespoons of butter to the skillet. Once melted, add minced garlic and cook for 1 minute, or until fragrant.
  5. Pour in chicken broth and lemon juice, and stir to combine. Add thyme, salt, and pepper.
  6. Bring sauce to a simmer and cook for 2-3 minutes, or until slightly thickened.
  7. Return chicken to the skillet and coat with sauce. Garnish with fresh parsley.
  8. Serve immediately.

Notes

For extra flavor, marinate the chicken in lemon juice and garlic for at least 30 minutes before cooking.
