Method
- Preheat grill. Season chicken and grill for 6-8 minutes per side until cooked through. Let rest and slice.
- Heat olive oil in a skillet. Add corn, season, and cook for 5-7 minutes until charred. Set aside.
- Blend avocado, yogurt, lime juice, garlic, and herbs until smooth. Add water to desired consistency. Season.
- Assemble salad with lettuce, chicken, tomatoes, avocado, cucumber, and corn. Drizzle with dressing.
Notes
Adjust the amount of water in the dressing to achieve your desired consistency. For a spicier kick, add a pinch of red pepper flakes to the chicken or dressing.
