Ingredients
  

For the Grilled Chicken
  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 0.5 teaspoon paprika
  • 0.25 teaspoon garlic powder
  • to taste Salt and black pepper
For the Grilled Corn
  • 1 cup sweet corn (canned or frozen, well-drained)
  • 0.5 teaspoon olive oil
  • Pinch of salt and black pepper
For the Salad
  • 4 cups mixed greens or chopped romaine lettuce
  • 1 cup cherry tomatoes, halved
  • 1 ripe avocado, sliced
  • 0.5 cucumber, sliced
For the Creamy Avocado Dressing
  • 0.5 ripe avocado
  • 0.25 cup plain Greek yogurt or sour cream
  • 2 tablespoons lime juice (or lemon juice)
  • 1 small clove garlic, minced (optional)
  • 0.25 cup fresh cilantro or parsley (optional)
  • 2 tablespoons water (adjust as needed)
  • to taste Salt and black pepper

Method
 

  1. Preheat grill. Season chicken and grill for 6-8 minutes per side until cooked through. Let rest and slice.
  2. Heat olive oil in a skillet. Add corn, season, and cook for 5-7 minutes until charred. Set aside.
  3. Blend avocado, yogurt, lime juice, garlic, and herbs until smooth. Add water to desired consistency. Season.
  4. Assemble salad with lettuce, chicken, tomatoes, avocado, cucumber, and corn. Drizzle with dressing.

Notes

Adjust the amount of water in the dressing to achieve your desired consistency. For a spicier kick, add a pinch of red pepper flakes to the chicken or dressing.
