Ingredients
  

Dry ingredients
  • 1 1/2 cups whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
Wet ingredients
  • 1/2 cup Greek yogurt
  • 1/4 cup honey or maple syrup
  • 1 large egg
  • 1 teaspoon vanilla extract
Main ingredients
  • 1 cup diced apples about 1 medium apple
  • 1/4 cup chopped walnuts or pecans (optional)

Method
 

  1. Preheat oven to 350°F (175°C) and prepare muffin tin.
  2. Mix dry ingredients in a bowl.
  3. Combine wet ingredients in another bowl.
  4. Mix wet into dry, then fold in apples and nuts.
  5. Divide batter into muffin cups and bake 15-18 minutes.
