Ingredients
  

Wet ingredients
  • 2 pieces ripe bananas, mashed
  • 1 cup rolled oats
  • 1/2 cup whole wheat flour
  • 1/4 cup honey or maple syrup
  • 1/2 cup unsweetened applesauce
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup milk (dairy or non-dairy)
Optional mix-ins
  • 1/4 cup chopped nuts or chocolate chips optional

Method
 

  1. Preheat oven to 350°F (175°C) and line a muffin tin.
  2. Mix mashed bananas, honey, and applesauce in a large bowl.
  3. Combine dry ingredients in another bowl and add to wet mixture.
  4. Stir in milk and fold in optional nuts or chocolate chips.
  5. Spoon batter into muffin tin and bake for 15-20 minutes.
  6. Cool muffins before serving.

Notes

For extra flavor, add a dash of vanilla extract or a handful of berries.
