Ingredients
  

Wet ingredients
  • 2 pieces ripe bananas, mashed
  • 1 cup rolled oats
  • 1/2 cup milk (or dairy-free alternative)
  • 1/4 cup honey or maple syrup
  • 1/4 cup applesauce
  • 1 teaspoon vanilla extract
Dry ingredients
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
Optional mix-ins
  • 1/2 cup nuts or chocolate chips optional

Method
 

  1. Preheat oven to 350°F (175°C) and prepare muffin tin.
  2. Mash bananas in a large bowl.
  3. Add oats, milk, honey, applesauce, and vanilla; mix well.
  4. Mix dry ingredients separately, then combine with wet mixture.
  5. Fold in nuts or chocolate chips if using, then fill muffin cups.
  6. Bake for 18-20 minutes until golden and cooked through.
