Ingredients
  

Dry ingredients
  • 1 ¾ cups all-purpose flour
  • ½ cup protein powder
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
Wet ingredients
  • 1 cup Greek yogurt
  • 2 large eggs
  • ¼ cup milk
  • cup honey or maple syrup
  • 1 tsp vanilla extract

Method
 

  1. Preheat oven to 375°F (190°C). Line a 12-cup muffin tin.
  2. Mix dry ingredients in a bowl. Whisk wet ingredients in a separate bowl.
  3. Combine wet and dry mixtures gently until just combined.
  4. Divide batter evenly into muffin cups and bake for 18–20 minutes.
  5. Let muffins rest for 5 minutes, then transfer to a wire rack. Serve warm or at room temperature.

Notes

For added flavor, fold in chocolate chips or berries before baking.
