Method
- Combine soy sauce, honey, rice vinegar, ketchup, garlic, ginger, and red pepper flakes (if using).
- Place chicken in the Instant Pot. Pour the sauce mixture over the chicken.
- Close lid, set valve to sealing. Cook on high pressure for 8 minutes (10 for breasts).
- Let pressure release naturally for 10 minutes, then quick release remaining pressure.
- Remove the chicken from the Instant Pot and set aside.
- Whisk cornstarch and water to create a slurry.
- Turn Instant Pot to saute mode. Add slurry and cook, stirring, until sauce thickens.
- Return chicken to Instant Pot and toss to coat with sauce.
- Serve over rice and garnish with sesame seeds and green onions, if desired.
Notes
For a thicker sauce, add more cornstarch slurry. Adjust the amount of red pepper flakes to your spice preference.
