  • 1.5 lbs boneless, skinless chicken thighs or breasts cut into 1-inch pieces
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 tablespoons rice vinegar
  • 2 tablespoons ketchup
  • 4 cloves garlic minced
  • 1 teaspoon ginger grated
  • 1/2 teaspoon red pepper flakes optional
  • 1 tablespoon cornstarch
  • 2 tablespoons water
Serving
  • Cooked rice for serving
  • Sesame seeds and chopped green onions for garnish (optional)

Method
 

  1. Combine soy sauce, honey, rice vinegar, ketchup, garlic, ginger, and red pepper flakes (if using).
  2. Place chicken in the Instant Pot. Pour the sauce mixture over the chicken.
  3. Close lid, set valve to sealing. Cook on high pressure for 8 minutes (10 for breasts).
  4. Let pressure release naturally for 10 minutes, then quick release remaining pressure.
  5. Remove the chicken from the Instant Pot and set aside.
  6. Whisk cornstarch and water to create a slurry.
  7. Turn Instant Pot to saute mode. Add slurry and cook, stirring, until sauce thickens.
  8. Return chicken to Instant Pot and toss to coat with sauce.
  9. Serve over rice and garnish with sesame seeds and green onions, if desired.

Notes

For a thicker sauce, add more cornstarch slurry. Adjust the amount of red pepper flakes to your spice preference.
