Method
- Preheat oven to 400°F (200°C).
- Pat the chicken dry with paper towels.
- Combine olive oil, salt, pepper, garlic powder, paprika, and thyme.
- Rub the olive oil mixture all over the chicken.
- Place the chicken in a baking dish.
- Pour chicken broth or water into the bottom of the pan.
- Bake for 60-75 minutes, until the internal temperature reaches 165°F (74°C).
- Let the chicken rest for 10-15 minutes before carving.
Notes
For extra crispy skin, broil the chicken for the last few minutes of cooking, keeping a close eye to prevent burning.
