Ingredients
  

Dry Ingredients
  • 1/2 cup Coconut Flour
  • 1 tsp Baking Powder
  • 1/3 cup Erythritol or Monk Fruit Sweetener
  • 1/4 tsp Salt
Wet Ingredients
  • 4 large Eggs
  • 1/4 cup Melted Coconut Oil or Butter
  • 1/4 cup Unsweetened Almond Milk
  • 1 tsp Vanilla Extract
Optional Add-ins
  • 1/4 cup Sugar-Free Chocolate Chips (optional)
  • 1/4 cup Chopped Nuts (optional)
  • 1/4 cup Unsweetened Shredded Coconut (optional)

Method
 

  1. Preheat oven to 350°F (175°C). Grease or line muffin tin.
  2. Mix dry ingredients in a bowl. Whisk wet ingredients separately.
  3. Combine wet and dry until smooth. Fold in optional add-ins.
  4. Scoop batter into muffin tin, filling 2/3 full.
  5. Bake for 18-20 minutes. Cool before serving.

Notes

Store muffins in an airtight container for up to 3 days or freeze for longer storage.
