My Favourite Meal Prep So Far: Honey Garlic Chicken & Fried Rice!

Ingredients
  

Honey Garlic Chicken
  • 1.5 lbs boneless, skinless chicken breasts cut into bite-sized pieces
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 2 tablespoons rice vinegar
  • 4 cloves garlic minced
  • 1 teaspoon ginger minced
  • 1/2 teaspoon red pepper flakes optional
Fried Rice
  • 1 tablespoon olive oil
  • 2 cups cooked rice preferably day-old
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1/4 cup soy sauce for fried rice
  • 1 tablespoon sesame oil
  • 2 eggs lightly beaten
  • Green onions chopped (for garnish)

Method
 

  1. Whisk together soy sauce, honey, rice vinegar, garlic, ginger, and red pepper flakes (if using).
  2. Add chicken to the marinade and toss to coat. Marinate for at least 30 minutes, or up to overnight.
  3. Heat olive oil in a skillet over medium-high heat. Add chicken and cook until browned, about 5-7 minutes.
  4. Remove chicken from the skillet and set aside.
  5. Add rice and vegetables to the skillet. Cook, stirring occasionally, until heated through, about 5 minutes.
  6. Pour in soy sauce and sesame oil, and stir to combine.
  7. Push rice to one side. Pour in beaten eggs and cook, stirring, until scrambled.
  8. Mix the scrambled eggs into the fried rice.
  9. Add the cooked chicken back to the skillet and stir to combine.
  10. Garnish with chopped green onions and serve.

Notes

For best results, use day-old rice for the fried rice. This will help prevent it from becoming mushy.
