Method
- Preheat oven to 350°F (175°C) and line a muffin tin.
- Combine oats and milk; let sit for 10 minutes.
- Mix in honey, oil, mashed banana, and vanilla.
- Whisk dry ingredients; add to wet mixture and fold in add-ins.
- Divide batter into muffin cups and bake 18-20 minutes.
- Cool muffins for 5 minutes before transferring to a wire rack.
Notes
For added flavor, sprinkle with a little cinnamon before baking.
