Ingredients
  

Dry ingredients
  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
Wet ingredients
  • 1 cup milk
  • 1/2 cup honey or maple syrup
  • 1/4 cup vegetable oil or melted coconut oil
  • 1 ripe banana banana, mashed
  • 1 teaspoon vanilla extract
Add-ins
  • 1/2 cup raisins or nuts (optional)

Method
 

  1. Preheat oven to 350°F (175°C) and line a muffin tin.
  2. Combine oats and milk; let sit for 10 minutes.
  3. Mix in honey, oil, mashed banana, and vanilla.
  4. Whisk dry ingredients; add to wet mixture and fold in add-ins.
  5. Divide batter into muffin cups and bake 18-20 minutes.
  6. Cool muffins for 5 minutes before transferring to a wire rack.

Notes

For added flavor, sprinkle with a little cinnamon before baking.
