Ingredients

  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
Wet Ingredients
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
Add-ins
  • 1/2 cup chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C) and line a muffin tin.
  2. Combine oats and milk; let sit for 10 minutes.
  3. Mix dry ingredients; add wet ingredients and stir.
  4. Fold in chocolate chips and divide batter into muffin cups.
  5. Bake for 18-20 minutes; cool before serving.

Notes

For extra flavor, add a handful of nuts or dried fruit.
