Method
- Mix dry ingredients in a bowl.
- Cream butter and sugar, then add egg yolk, vanilla, and pumpkin.
- Gradually add dry ingredients, then chill dough for 20 minutes.
- Shape into 1-inch balls, coat in sugar, and place on baking sheet. Flatten slightly.
- Bake at 350°F (175°C) for 15 minutes. Cool on wire rack.
