Method
- Cook pasta according to package directions. Drain and set aside.
- Heat olive oil in a large skillet over medium heat.
- Season chicken with salt, pepper, garlic powder, and red pepper flakes.
- Add chicken to the skillet and cook until browned and cooked through (about 5-7 minutes).
- Add onion and garlic to the skillet and cook until softened (about 3 minutes).
- Stir in diced tomatoes and bring to a simmer.
- Reduce heat to low and stir in heavy cream and Parmesan cheese. Simmer for 2-3 minutes, or until sauce has thickened slightly.
- Add cooked pasta to the skillet and toss to coat.
- Serve immediately, garnished with fresh parsley, if desired.
Notes
Adjust the amount of red pepper flakes to control the spiciness of the dish.
