Ingredients
  

Pasta
  • 8 oz pasta penne, rotini, or your favorite
Chicken
  • 1 tbsp olive oil
  • 1 lb boneless, skinless chicken breasts cut into bite-sized pieces
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.5 tsp garlic powder
  • 0.25 tsp red pepper flakes or more, to taste
Sauce
  • 0.5 cup chopped onion
  • 2 cloves garlic minced
  • 1 can diced tomatoes undrained (14.5 oz)
  • 0.5 cup heavy cream
  • 0.25 cup grated Parmesan cheese
  • 2 tbsp chopped fresh parsley for garnish (optional)

Method
 

  1. Cook pasta according to package directions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat.
  3. Season chicken with salt, pepper, garlic powder, and red pepper flakes.
  4. Add chicken to the skillet and cook until browned and cooked through (about 5-7 minutes).
  5. Add onion and garlic to the skillet and cook until softened (about 3 minutes).
  6. Stir in diced tomatoes and bring to a simmer.
  7. Reduce heat to low and stir in heavy cream and Parmesan cheese. Simmer for 2-3 minutes, or until sauce has thickened slightly.
  8. Add cooked pasta to the skillet and toss to coat.
  9. Serve immediately, garnished with fresh parsley, if desired.

Notes

Adjust the amount of red pepper flakes to control the spiciness of the dish.
