Ingredients
  

Dairy & Eggs
  • 1 cup Greek yogurt (plain, unsweetened)
  • 2 large eggs
  • 0.25 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 1 cup whole wheat flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 teaspoon cinnamon (optional)
Optional Berries
  • 0.5 cup blueberries or other berries (optional)

Method
 

  1. Preheat oven to 350°F (175°C) and prepare muffin tin.
  2. Mix Greek yogurt, eggs, applesauce, and vanilla until smooth.
  3. Combine dry ingredients in a separate bowl.
  4. Gradually add dry to wet, mixing gently. Fold in berries if using.
  5. Spoon batter into muffin cups and bake for 15-20 minutes.
  6. Cool muffins before serving.
