Ingredients
  

Bananas
  • 2 pieces ripe bananas
Wet ingredients
  • 1/4 cup unsweetened applesauce
  • 1/4 cup almond milk
  • 1 teaspoon vanilla extract
Dry ingredients
  • 1 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
Optional mix-ins
  • 1/4 cup chopped nuts optional
  • 1/4 cup sugar-free chocolate chips optional

Method
 

  1. Preheat oven to 350°F (175°C) and line mini muffin tin.
  2. Mash bananas, then mix in applesauce, almond milk, and vanilla.
  3. Combine dry ingredients and add to wet mixture; mix until just combined.
  4. Fold in nuts and chocolate chips if using.
  5. Spoon batter into muffin tin and bake for 15-18 minutes.
  6. Cool muffins before serving.

Notes

Use ripe bananas for best flavor and sweetness.
