Ingredients
  

Dry ingredients
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
Wet ingredients
  • 1 cup almond milk
  • 1/4 cup vegetable oil
  • 1 tablespoon apple cider vinegar
  • 1/2 cup maple syrup
Blueberries
  • 1 cup fresh or frozen blueberries

Method
 

  1. Preheat oven to 350°F (175°C) and line a muffin tin.
  2. Mix almond milk and vinegar; let sit 5 minutes.
  3. Add maple syrup and oil; stir well.
  4. Combine dry ingredients; then mix into wet ingredients.
  5. Fold in blueberries, fill muffin cups, and bake 20-25 mins.
  6. Cool briefly before serving.

Notes

Use fresh blueberries for best flavor, but frozen works well too.
