Method
- Preheat oven to 350°F (175°C) and line a muffin tin.
- Mix almond milk and vinegar; let sit 5 minutes.
- Add maple syrup and oil; stir well.
- Combine dry ingredients; then mix into wet ingredients.
- Fold in blueberries, fill muffin cups, and bake 20-25 mins.
- Cool briefly before serving.
Notes
Use fresh blueberries for best flavor, but frozen works well too.
