Ingredients
  

Dry ingredients
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1/2 cup brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
Wet ingredients
  • 1 cup almond milk or any plant-based milk
  • 1/4 cup vegetable oil
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
Add-ins
  • 1/2 cup dairy-free chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C) and line a muffin tin.
  2. Mix dry ingredients in a bowl.
  3. Combine wet ingredients in another bowl.
  4. Mix wet into dry until just combined, then fold in chocolate chips.
  5. Spoon batter into muffin tin and bake for 18-22 minutes.
  6. Cool muffins before serving.

Notes

Use dairy-free chocolate chips for a fully vegan treat.
