Ingredients
  

Chicken
  • 1.5 lbs boneless, skinless chicken thighs cut into bite-sized pieces
Marinade
  • 3 stalks fresh lemongrass trimmed and finely minced (or 3 tablespoons lemongrass paste)
  • 3 cloves garlic minced
  • 1 small onion finely sliced
  • 2 tablespoons fish sauce or soy sauce for milder flavor
  • 2 tablespoons oyster sauce
  • 1 tablespoon light soy sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon ground black pepper
Cooking
  • 2 tablespoons vegetable oil
Garnish (Optional)
  • sliced red chili
  • fresh cilantro
  • lime wedges

Method
 

  1. Heat the pan. Stir-fry onion for 2–3 minutes until softened.
  2. Cook the chicken. Stir-fry for 8–10 minutes, or until chicken is cooked through and caramelized.
  3. Adjust and finish. Taste and adjust seasoning.
  4. Serve. Garnish and serve hot with jasmine rice or over vermicelli noodles.

Notes

Marinate the chicken for at least 30 minutes for best flavor.
