Ingredients
  

Dry ingredients
  • 1 cup whole wheat flour
  • 1/2 cup rolled oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
Wet ingredients
  • 1/4 cup brown sugar
  • 1/4 cup honey or maple syrup
  • 1/4 cup vegetable oil
  • 2 ripe bananas bananas, mashed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts or pecans

Method
 

  1. Preheat oven to 350°F (175°C) and prepare muffin tin.
  2. Mix dry ingredients in a bowl.
  3. Combine wet ingredients in another bowl.
  4. Mix wet into dry, then fold in nuts.
  5. Divide batter into cups and bake 18-20 minutes.

Notes

Do not overmix the batter for tender muffins.
