Ingredients
  

Dried Fruits & Nuts
  • 2 pieces ripe bananas, mashed
  • 1/3 cup melted coconut oil or unsalted butter
  • 1/2 cup honey or maple syrup
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1.5 cups whole wheat flour
  • 1/2 cup chopped nuts or chocolate chips (optional)

Method
 

  1. Preheat oven to 350°F (175°C) and line a muffin tin.
  2. Mix mashed bananas and melted fat until combined.
  3. Add honey, egg, and vanilla; stir until smooth.
  4. Whisk dry ingredients; fold into wet mixture.
  5. Fold in nuts or chocolate chips if desired, then fill muffin cups 2/3 full.
  6. Bake 18-20 minutes; cool before serving.

Notes

For extra flavor, add a sprinkle of cinnamon on top before baking.
