Method
- Preheat oven to 350°F (175°C) and line a muffin tin.
- Mix mashed bananas and melted fat until combined.
- Add honey, egg, and vanilla; stir until smooth.
- Whisk dry ingredients; fold into wet mixture.
- Fold in nuts or chocolate chips if desired, then fill muffin cups 2/3 full.
- Bake 18-20 minutes; cool before serving.
Notes
For extra flavor, add a sprinkle of cinnamon on top before baking.
